Stuffed eggs is a popular dish, the recipe of these varies depending on the locality where it is prepared. To prepare this recipe of eggs stuffed with tuna, the first thing we have to do is in a pan or pot, we will put water to boil, once the water is boiling we will take 7 eggs and put them in the pot to cook for 10 or 12 minutes approximately. Once the eggs are cooked, we will have to peel them very carefully not to break them and cut them in a half. Later, with the help of a small spoon, we will separate the egg yolks of the egg whites. (This process we must do so with great care that they do not break) Then we will grate the egg yolk with a grater placing them, obviously separated from the egg whites. We will only let an egg white cooked aside without grating, later to use it of decoration of the final plate.
We will take a deep bowl where we will crumble the tuna. For the mayonnaise, the only thing that we have to do is to crack an egg in the mixer, to add a trickle of oil, salt and vinegar and to beat. We will dust superficially the cut parsley and we will mix it all good. With a teaspoon we will refill twelve halves of egg whites, adding to them over the miscellany a little of mayonnaise and will cover it with the grating of the egg yolk. Finally we will place half an olive on each one.
